That's true, but since the question was specifically about "shemales" I did not ascribe that term to the description. However, I probably should have done so. I have just looked at four online dictionaries that include sex terms and all indicate that "spit roasted" is when one person performs oral sex on either of the other two partners while they engage in vaginal or anal intercourse.

So, spit roasted is something any combination of three people is capable of, assuming that one of them has a mouth. ;)

You are right about what spit roasting is. I misunderstood the OP's original description which he later clarified. I'm sure many people are like you, Tabitha, and would like to experience being in the middle. I know that I would certainly like to experience being in the middle.
