Got Zucchini comming out our ass, excuse the pun. We've had Zucchini Pie, Zucchini bread, Zucchini fries, HELP!!!:lol:

I've got a good zucchini bread recipe. You can also use pumpkin instead if you want.

3 large eggs
2 cups sugar
1 cup vegetable oil
1 tsp. vanilla extract
2 cups grated zucchini
3 cups AP flour
1 tsp. ground cinnamon.
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 cup nuts (optional, but who doesn't love nuts :kiss:)

Beat the eggs in a medium bowl to combine them. Add the sugar, vegetable oil and vanilla and whisk together by hand thickens and becomes lemon-like in color.

Combine the zucchini, flour, cinnamon, baking soda, salt and baking powder in a separate bowl and sift together. Add the wet mixture to the dry and stir until it just comes together. Fold in the nuts and pour into two prepared loaf pans

Bake at 350 F for one hour, remove from the oven and let cool in the pans for 10 minutes before removing.

KUNG POO CHICKEN Recipe

3/4 lb. boneless, skinless chicken breast, cut into strips
4 tbsp. soy sauce,
2 tbsp. real lemon juice
2 tbsp. sugar
2 tbsp. cornstarch
6 chili peppers
2 cloves of garlic, minced
2 tbsp. olive oil
4 cups rice wine
1 small red bell pepper, chunked
1/2 small onion, chunked
1/4 c. unsalted roasted peanuts
2 cups cooked white rice

Divide rice wine, chicken and whole chilis and insert into both lover's anuses
Start rice and slow dance for twenty minutes.
Fry red pepper and onion in olive oil for ten minutes or until soft.
Remove chicken and chilis from anuses and cut chicken into cubes after washing. Add chicken and sauce to onion mixture til almost done and add peanuts.
serves two.

Slice a zucchini in whatever manner you prefer and whatever thickness you prefer
Brush on olive oil
Place on your bbq for however long you desire
Eat

I'm a junk food junkie, I admit, my diet torture regimen has cereal and fruit for breakfast, salad for lunch, and for dinner I get my fried food fix in by stir-frying, or really saute-ing stuff in a pan. Pam for low calorie, olive oil for that flavor. Even on a low calorie diet you needs some fats for your brainstem and other functions, olive oil and omega-3s from fatty fish is the healthiest oil.
Basically you can throw fish, turkey, or chicken in a pan with almost any vegetables, and there's so many to choose from for varied dinners, but really it's pretty easy to begin. The combinations and cooking times will take more time to master.
Thankfully google can help.
Oil is like the most calorie dense food on the planet, so I don't use much, but a little in a pan with lots of onions, peppers and a little meat tastes real good and satisfying.
